Learn how to make restaurant style Stuffed Tomato Potato Sabzi - a simple vegetarian main course recipe from our chef Archana on Ruchkar Mejwani.Ingredients:7 TomatoesFor Stuffing4-5 Potatoes, Boiled & MashedCoriander Leaves1/2 tsp Coriander Seeds Powder1 tsp Mix Masala1 tsp Kolhapuri MasalaSalt to taste2 tbsp OilFor Gravy2 tbsp OilCoriander LeavesPaste of 2 Onions, Scooped Tomatoes, 7-8 Garlic, 1/2 inch Ginger1 tbsp Mix Masala1 tbsp Kolhapuri Masala1 tbsp Coriander Seeds PowderSalt to tasteWaterMethod:- First chop both the ends of the tomatoes. Scoop out the inside mixture from the tomatoes. Similarly keep doing this for all the tomatoes.- To make the stuffing in a bowl add boiled & mashed potatoes.- Then add coriander leaves, mix masala, kolhapuri masala, coriander seeds powder and salt. Mix everything well.- Stuff this potato mixture in all the tomatoes.- In a pan heat some oil. Place the stuffed tomatoes on the oil.- Cover it and let the tomatoes cook for 10 minutes.- To make the gravy, heat some oil in a pan.- Add coriander leaves.- Then add onion-tomato-ginger garlic paste. Saute this paste for a minute.- Add mix masala, kolhapuri masala, salt & coriander seeds powder. Mix well.- Add little water and mix well.
