Classic (Vegetarian) Stuffing

1 baguette or loaf of bread, cubed
2 tbsp oil/butter
1 onion, finely diced
3 celery stalks, finely diced
2 carrots, shredded
2 cloves garlic, minced
1 tbsp fresh parsley
1 tbsp fresh sage, chopped
1 tsp fresh thyme leaves
3 cups vegetable broth
salt and pepper

Sausage, Apple and Cranberry Stuffing

1 baguette or loaf of bread, cubed
1 tbsp oil
1lb breakfast sausage removed from its casing
1 large onion, finely diced
3 stalks celery, finely diced
2 apples, peeled and finely diced
1 tbsp fresh sage, chopped
1 tsp fresh thyme leaves
3 vegetable/chicken broth
2 eggs, beaten
1 cup dried cranberries (optional)
salt and pepper

Wild Rice and Mushroom (Gluten-Free) Stuffing

2 tbsp oil/butter
1 large onion, finely diced
3 celery stalks, finely diced
2 cups mushrooms, sliced
2 cloves garlic, minced
1 tbsp fresh sage, chopped
1 tsp fresh thyme leaves
1 cup wild and long grain rice
3 cups vegetable/chicken broth
salt and pepper
