Today, I made three versions of eggs Benedict, the perfect brunch dish,
from plain ol salmon eggs Benedict to asparagus bacon eggs Benedict.
I personally find the Prosciutto and bacon ones better than salmon.
As long as there is bread and poached egg with Hollandaise sauce, any topping will work. Build your own combo!

* Hollandaise sauce ( 4 , for 4 portions)

3, 1/2 , 100g,
3 egg yolks, juice of half a lemon, 100g unsalted butter, 2 pinches of salt

1. Cut unsalted butter into small cubes and melt it completely in a microwave.

If you dont have a microwave, you can do so on the hob in a pot.

2. In a mixing bowl, add and blend egg yolks, lemon juice and salt with a hand blender.


You can use a standing blender or a whisk instead.

3. Slowly whisk in hot melted butter until you get a mayonnaise-like sauce.

When using hot melted butter, do not add the sediment-like white bit at the bottom.

4. Keep the completed Hollandaise sauce warm.
