Summer Meal Planning feat. rice cooker, food dehydrator and freezer! (Vegetarian Friendly!)

Too hot to turn on the oven? Me too! I'm shopping for foods that require minimal to no cooking, and mainly vegetarian.

Today I shopped at the Asian Supermarket 99 Ranch and our local farm stand Tapia for about $75. I'm planning on using my rice cooker to make steamed rice for sushi, pan fried noodles with veggies, dehydrated peaches, and a few convenience items like scallion pancakes and chicken potstickers for the girls and my lunches. After squeezing lemons from our tree all afternoon yesterday, I'm also making a few batches of lemonade concentrate to stash in the freezer for a rainy day.
At the farmstand I loaded up on corn and eggplant, with plans to make corn salad, sliced corn off the cob for freezing, and eggplant involtini (will roast eggplant slices in the oven at nighttime when the temperatures drop) to stash in my freezer for Meal Train deliveries to two expectant mommies I know. Green beans will just take a quick blanch in a pot of water on the stove.
