This simple homemade chicken biryani is just like the biryani you'll get in restaurants.The recipe is super easy to follow. Chicken Biryani is a mixed rice & chicken dish with its origins among the Muslims of the Indian subcontinent. It can be compared to mixing a curry, later combining it with semi-cooked rice separately. Biryani can be made from any meat like chicken, lamb, beef and seafood biryani like fish biryani and prawn biryani has also become a fad nowadays. In this biryani making i've have followed my moms style chicken biryani method to get that home taste.

Ingredients for Chicken Marination:

1. Chicken - 2 lb
2. Plain Yogurt - 1 Cup
3. Red Chili Powder - 2 tbsp
4. Turmeric Powder - 1 tbsp
5. Coriander Powder - 2 tbsp
6. Cumin Powder - 2 tbsp
7. Salt 2 tsp or as per taste
8. Ginger Garlic Paste - 3 tbsp

Ingredients for Biryani Masala

1. Oil - 1/2 Cup
2. Onion - 3 Medium - Finely Chopped
3. Butter - 2 tbsp
4. Cinnamon Stick - 2
5. Green Cardamom - 8
6. Black Cardamom - 2
7. Cloves - 5-6
8. Bay Leaves - 2
9. Cumin Seeds - 1 tbsp
10. Green Chili - 3
11. Tomato - 1 - Diced
12. Chopped Mint Leaves - 1/2 Cup
13. Chopped Coriander Leaves - 1 /2 Cup
14. Lemon Juice - 1/2 Lemon
15. Fried Onions - 1/2 Cup
16. Some chopped mint and Coriander leaves and fried onions for garnishing

Ingredients for Biryani Rice

1. Water - 6 Cups
2. Salt - As per taste
3. Green Cardamom - 3
4. Black Cardamom - 1
5. Cloves - 4
6. Cumin Seeds - 1 tsp
5. Rice - 5 Cups (Pre-Soaked for an hour)



Method:

Marination:

1.Mix all the ingredients for chicken marination in a bowl
2.Mix well and keep aside for 1-2 hours (For best results keep overnight in refrigerator)

For Biryani Masala:

3. In a think bottom utensil, heat oil and butter.
4. Add cinnamon sticks, black & green cardamoms, cloves, bay leaves, cumin seeds, green chili and fry for about a min
5. Add onions and fry until these are golden brown
6. Add tomatoes and fry until oil separates
7. Add marinated chicken and fry on med to low heat

meanwhile..

8. Heat water for rice and add all the ingredients listed in Briyani rice ingredient list above
9. Add pre-soaked rice to it and cook until rice is cooked about 70%
10. When rice is cooked 70% , drain and keep aside
11. In the biryani masala when oil separates take some oil from the utensil in a bowl and keep aside
12. add lemon juice, chopped mint and coriander leaves and fried onions and mix well
12.Now add rice on top of biryani masala by spreading it evenly.
13. Sprinkle chopped mint and coriander leaves and fried onions and then the oil on top of rice
14. Seal the utensil with aluminium foil and cover it
15. Cook for about 40 mins on a low flame or until the rice is cooked.

Biryani is ready!
