A super quick and easy chaat prepared with fresh sweet potatoes.

SWEET POTATO CHAAT

Ingredients

250 grams sweet potato, boiled, peeled and cut into roundels
2 tbsps ghee
½ tsp Tata Sampann Chilli Powder
¼ tsp cumin powder
Salt to taste
Chaat
1 medium onion, finely chopped
1 medium tomato, finely chopped
1 medium cucumber, finely chopped
Green chutney for sprinkling
Date and tamarind chutney for sprinkling
Chilled yogurt for drizzling
Pomegranate pearls for sprinkling
Black salt to taste
Chaat masala for sprinkling
Roasted cumin powder for sprinkling
Crisp papdis as required
Ginger strips for garnish
Chopped fresh coriander leaves for garnish

Method

1. Heat ghee in a non-stick pan.
2. Place the sweet potato roundels and cook till they turn golden brown and slightly crisp on both sides.
3. Sprinkle Tata Sampann Chilli Powder, cumin powder and salt and gently toss.
4. Take the pan off the heat, reserve a few sweet potato roundels for garnish and arrange the remaining in a serving bowl.
5. Sprinkle chopped onion, chopped cucumber, and chopped tomato. Drizzle green chutney and date and tamarind chutney. Drizzle a little yogurt. Arrange the reserved sweet potato roundels on top. Sprinkle some more chopped onion, some chopped tomato and some chopped cucumber. Drizzle the green chutney, date and tamarind chutney and some yogurt. Sprinkle some pomegranate pearls, black salt, chaat masala and roasted cumin powder.
6. Crush a few papdis on top and garnish with ginger strips and coriander leaves.
