Thank you very much for your support! ~ Rockin RobinLittlebitsof.comhttps://littlebitsof.com/2016/06/caramelized-onion-bacon-compote-sweet-potato-crostini/Sweet Potato AppetizerIngredients: 2 organic sweet potatoes, rinsed, peeled and sliced into inch rounds8 oz. uncured bacon, cooked, chopped into small pieces (about 8 pieces)3 sweet yellow onions, sliced and chopped cup chopped walnuts3 dates, sliced and then cut into small piecesOlive oil1 Tbsp. fresh rosemary, chopped fineSaltDirections:Preheat oven to 425 degrees F. Coat the sweet potato rounds with olive oil in a bowl. Rub the oil into the potato with your fingers until all pieces are coated with oil.Place the rounds on a parchment paper lined baking sheet and space them out so they dont touch each other. Bake for 30 minutes in the middle of the oven until golden brown.In a large frying pan cook the bacon until crispy and then drain of a paper towel covered plate. Once cool, chop the bacon into small pieces and set aside.Leave about 2 Tbsp. of bacon grease in the pan and add the onion and saute on medium for a good 45 - 60 minutes. Once the onions get going, turn the heat to low and stir frequently.At about 45 minutes of cooking the onion, add the dates and the rosemary and stir to combine.After about an hour of cooking the onion, dates and rosemary, add the bacon and walnuts to combine and heat everything up.Once the mixture is heated through, you can put together the appetizer by placing a small amount onto each sweet potato round.
