Tadokoro is arguably the best sushi restaurant in San Diego, sourcing and using only fresh, top quality ingredients across all their menu items, and rivaling the long-established Sushi Ota.

This Video captures the preparation of raw octopus sushi. A pre-treated raw octopus is both slimy and tough, and significant preparation is required to massage it with salt to get rid of the sliminess, and also to break down the connective tissue to tenderize it. This massaging requirement is one reason why you don't see raw octopus served much in sushi restaurants.

The raw octopus sushi had a mild flavor and a natural sweetness, which was a little more subtle (and less salty) than the flavors that are experienced from eating octopus that is cooked in the traditional fashion. At the forefront is the texture that comes from eating the "disc" and "ball" components of the octopus leg, which provide both a crunchy and tender experience. This sushi is something that all octopus lovers mush order, and an item sushi connoisseurs and adventurers should try at least once.
