FULL RECIPE FOR TAHINI TIDBITSMany thanks to Canan, my dear sisterIngredients 1 cup all-purpose flour1 cup icing sugar1 cup tahini15-20 pine nuts (one per each cookie)1 tsp baking powder1 tsp vanillin powderDirectionsMAKING THE DOUGHSet a large bowl.Combine the dry ingredients and mix thoroughly. Then, add the tahini and stir the mixture.Knead the dough until you achieve a soft and smooth dough. Tahini may have a different ratio of oil. If your dough is very crumbly, add 1 tsp of butter at room temperature to achieve a soft and smooth dough.SHAPINGDivide the dough into 2x2 cm pieces. Round each piece using your hands. The dough tends be a bit crumbly. However, the warmth of your hands will soften the dough and help to shape your tidbits easier.Place a pine nut onto each tahini tidbit to enhance the flavor. A gentle press on the nut should keep it from detaching during the baking process.When shaping is almost done, preheat the oven to 340 F or (170 C).COOKINGCook the tidbits for 15-18 minutes or until they begin to present with thin cracks on the top surface. Take the cookies out of the oven and wait for 15 minutes for them to cool down. When they are hot, they fall apart very easily! PREPARING TURKISH COFFEEWhile tidbits are baking, there is just enough time to prepare the Turkish coffee, which goes wonderfully with these cookies!Combine in a cezve, tbsp of freshly-ground Turkish Coffee and a coffee cup of water. A cezve is a small coffee pot that is only used for cooking Turkish Coffee.Mix and stir the mixture thoroughly. Once all the coffee is dissolved in the water, stop stirring and heat the cezve on the stove. (Do not disturb the coffee mixture while it is slowly heating!) Lower the heat and watch for a near-solid layer forming on the surface of the mixture. This layer will become the foam.When the foam begins to rise, apportion the foam evenly among the coffee cups and return the cezve to the heat for one more minute of boiling.
