Halloween Cupcakes
Makes 6 cupcakes

INGREDIENTS
Pumpkin Cupcakes
100 grams pumpkin, peeled and diced
1 large egg
70 milliliters milk
2 tablespoons sugar
50 grams unsalted butter, melted
150 grams pancake mix

White & Purple Buttercream Frostings
100 grams unsalted butter, room temprature
200 grams powdered suger
tablespoon water
1 tablespoon purple yam powder

For Decoration
Jelly beans
Chocolate sandwich cookies
Melted white chocolate
Mini chocolate chips

PREPARATION
Preheat the oven to 350F (180C). Line a 6-cup muffin tin with paper liners.
Add the pumpkin to a medium bowl and cover with plastic wrap. Microwave at 600W for 3 minutes, until tender.
Mash the pumpkin, then set aside to cool.
In a separate medium bowl, combine the egg, milk, and sugar, and whisk well. Add the melted butter in 2 additions and whisk to combine. Add the mashed pumpkin and whisk well, then add the pancake mix and whisk to incorporate.
Transfer the batter to a piping bag or zip-top bag with the corner cut off.
Pipe the batter into the lined muffin tin, filling each cup halfway.
Bake for 20 minutes, until a toothpick inserted in the center of a cupcake comes out clean. Let cool completely.
Make the buttercream: In a medium bowl, beat the butter with an electric hand mixer until creamy. Add the powdered sugar and beat until well combined, then add the water and beat until smooth.
Transfer half of the buttercream to another bowl. Add the purple yam powder and mix well.
Transfer the buttercreams to 2 piping bags or zip-top bags with a corner snipped off.
Use a piping tip to hollow out the center of each cupcake. Add jelly beans to the centers and re-cover with the punched-out pieces of cake.
Make monster cupcakes: Pipe purple buttercream onto 3 of the cupcakes. Top each with a chocolate sandwich cookie. Pipe 2 dollops of melted white chocolate onto the cookie and top with chocolate chips for eyes.
Make ghost cupcakes: Pipe white buttercream onto 3 of the cupcakes. Decorate with chocolate chips to make ghost faces.
