INGREDIENTS
200 grams pork belly
1 tablespoon sesame oil
1 teaspoon chopped ginger
1 teaspoon chopped garlic
medium white onion, chopped
2 shiitake mushrooms, chopped
1 star anise pod
250 milliliters water
2 tablespoons sugar
2 tablespoons sake
2 tablespoons vinegar
2 tablespoons soy sauce
1 tablespoon oyster sauce
2 hard-boiled eggs, peeled
Cooked white rice, for serving
Steamed bok choy, for serving


PREPARATION
Dice the pork belly.
Heat the sesame oil in a medium pot over low heat. Add the ginger and garlic and cook until fragrant, 1-2 minutes.
Add the onion and cook until translucent, about 5 minutes. Add the pork belly and cook until it starts to brown, about more 5 minutes.
Add the shiitake mushrooms and star anise pod and stir. Add the water, sugar, sake, vinegar, soy sauce, and oyster sauce, stir well, and bring to a boil.
Add the boiled eggs, turn to coat in the sauce, and simmer uncovered for 30 minutes.
Serve over rice with bok choy and halved boiled eggs.
