(English Recipe)

STUFFED SHIITAKE MUSHROOMS
Makes 6 stuffed mushrooms

INGREDIENTS
150 grams ground chicken
30 grams onion, minced
beaten egg
2 tablespoons cornstarch
1 tablespoon sake
teaspoon grated ginger
teaspoon salt
Black pepper, to taste
6 shiitake mushrooms, stems removed
All-purpose flour, for dusting
6 slices of mozzarella cheese

For Serving
5 shiso leaves
Sliced scallions

PREPARATION
Line a baking sheet with foil.
In a medium bowl, combine the ground chicken, onion, egg, cornstarch, sake, ginger, salt, and pepper. Mix well with your hands to combine.
Sprinkle flour all over the shiitake mushrooms.
Stuff the mushrooms with the filling, then place on the prepared baking sheet. Top each mushroom with a slice of cheese.
Broil the mushrooms in the toaster oven for 7 minutes, or until lightly browned.
Arrange the shiso leaves on a serving plate, then set the mushrooms on top. Garnish with pepper and scallions.
