Tau suan is a dessert soup made with split mung (green) beans. Mung beans is believed to aid the body in reducing heatiness (cooling), while this starchy and gooey concoction definitely warms your stomach as well. Top this up with loads of youtiao (fried dough sticks) and let it soak in the soup for extra texture and aroma. Its an old school comforting dessert that never fails to bring a smile since these days of childhood! For a more deep colour version use brown / red sugar instead of normal white sugar.

500g mung beans
10 pandan leaves
80g sweet potato starch
150g sugar (adjust to taste)
2 litres of water
1 fried you tiao (cut into croutons like pieces)
