Thayir vada/ Dahi vada is a traditional South Indian recipe. It is basically medhuvada/Ulunthu vada dipped in thick curd and garnished with bondi. Medhuvada/Ulunduvada is a great appetizer.Medhuvadai with Idly/pongal and chutney/sambar isa popular breakfast combo in south india.Ingredients:Uraddal- 1.5 cupsOil- For fryingGreen chillies- 5Jeera- 1/4 tspSalt- As neededShredded coconut- 1/4 cupCurd/yogurt- 1 cupMustard seeds- 1/2 tspRed chilli powder- For garnishingBoondhi or omapodi- For garnishingDirections:1.Soak 1.5 cups uraddal for about 4 hours. Grind uraddal by sprinkling some ice cold water now and then until its fluffy.Add 2 green chillies while grinding.Take a small amount of batter and put it in water. If it floats then you can switch off the grinder.2.Add 3/4 tsp salt and keep it aside.3.Grind 1/4 cup coconut with 1/4 tsp jeera and 3 green chillies into a paste.Add 2 cups curd/yogurt and 1/2 tsp salt to the grounded coconut paste. Mix it well and then keep it aside.4.Heat oil in a kadai. Take a small amount of batter, make a ball, put a hole using your thumb and fry it in oil.5.Fry till both sides are crisp and golden brown.Take hot water in a bowl. Dip the fried uradvada in hotter for 2 minutes. Then squeeze the water out.6. Take a small amount of curd mix in a bowl. Put the squeezed vadai in curd immediately.7.
