Almond Pancakes Recipe
Ingredients:
cup almond flour
cup coconut flour
2 eggs, beaten
1 tsp baking powder
2 Tbsp avocado oil, or coconut oil melted
1 tsp. Vanilla extract
tsp. Salt
1 tsp. Cinnamon
cup almond milk or any milk, add more to get the right thickness
tsp monk fruit sweetener
1 Tbsp. butter

Directions:
Add all the dry ingredients to a bowl, the flours, baking powder, cinnamon, monk fruit sweetener, and salt. Mix with a whisk to combine.

Add all the wet ingredients to the dry bowl: the eggs, vanilla, oil, and milk. Stir to combine but dont over mix. Add more milk if the batter is too thick.

Preheat a pan over medium heat and add 1 tsp. Of butter to the pan. Use a spatula to spread the butter over the pan and when its hot and bubbling, add the batter by spoonfuls.
Keep the pancakes on the smaller size for best results. These pancakes will spread as they cook so leave space between them.

Cook for 3 or 4 minutes or until the tops look dry and you see brown around the edges. Lift a pancake with a spatula to check for that golden brown look. If you see it, flip them over and repeat the process.

The pancakes are best served with warm maple syrup drizzle. Enjoy!
