The Best Homemade VEGETABLE SOUP made with a 2 year old

This was our very first Cooking with Kyler episode. Kyler and I went to Underwood family farms and picked our own fresh produce. When you expose kids to healthy ingredients, they will pass it on.

In this recipe, we add orecchietta but you can leave out the pasta all together or add some other small pasta, like elbow macaroni or shells.

Here is what we used:
2 carrots, peeled and chopped.
3 celery stalks, chopped
1/2 sweet potato, peeled and diced
1/2 fennel

2-3 dinosaur kale leaves, rolled and chopped
1/2 an onion, diced (we picked a maui onion, but any onion is great)
3 cloves of garlic, smashed and chopped up
small bunch of parsley, chopped
S & P to taste
1/2 cup orecchietta

Bring stock to a boil, and add your vegetables. Season to taste. Simmer and cook for about 8 minutes then add the orecchietta. cook according to instructions on box.

When ready, squeeze a little lemon and grate some parmesan cheese on top. Enjoy!
