Breakfast Skillet Recipe AKA The Bloom Breakfast

Ingredients for 1 serving:
2 pastured eggs
3 strips of uncured bacon
cup of yellow onion, super fine dice
2 organic cremini mushrooms, super fine dice
1 medium or two small organic gold potatoes, scrubbed, sliced inch thick slices
organic red bell pepper, chopped into bite size pieces
4 stalks of asparagus, trimmed and cut into bite size pieces
cup of white cheddar cheese, grated
4 - 5 leaves of fresh basil, rolled and chopped
Small handful of organic fresh parsley, chopped
Olive oil
Salt
Pepper

Description:
Place the bacon in a cast iron pan starting on medium heat. Layer the bacon so that it is flat in the pan. Turn the bacon frequently as it cooks. Once it is cooked and has crisped up, place it on a paper towel covered plate. Once cool, cut or tear into bite size pieces.

You have two choices here, either pour the excess bacon grease into a mug or use all of it to cook this dish. I chose to pour out the excess and then add some olive oil to the pan to make up for it.

Turn the temperature up to medium high heat and add the onion and mushrooms. Stir and cook this mixture for 3 minutes. Lower the temperature if need be.

Next add the sliced potato to the pan by nestling them into the onion so they are touching the bottom of the pan. Layer a few of the potatoes on top of the bottom layer. Cover and cook for 5 minutes.

Check to see how soft the potatoes are by piercing with a fork. They should be somewhat soft. You can flip the potatoes over if you wish. I like to get them browned and slightly crispy on both sides.

Its now time to add the bell peppers and asparagus to the perimeter of the pan. That way these veggies can get a little browned. Also add of the basil and parsley to the pan. Place the lid back on for 3 more minutes.

Then stir the bell pepper and asparagus a bit and then add the cheese. Cover and cook 1 to 2 minutes longer until the cheese starts to melt.

Now add the eggs by cracking them on top of this mixture. You will want to create an indentation in the middle of this mixture so the eggs will stay in the middle. Add salt, pepper, and more basil and parsley. Cover and cook for 1 to 2 minutes or until the eggs are cooked to your liking.

Serve this up by adding the bacon sprinkled on top. You will enjoy this!
