BBQ Chicken Sandwich Recipe
Ingredients:
4 chicken thighs, boneless skinless
4 Brioche rolls
cup avocado mayo by Primal Kitchen
cup Classic BBQ sauce by Primal Kitchen
1 tsp. Smoked paprika
tsp. Onion powder
tsp garlic powder
2 tsp. Apple cider vinegar, with the mother
2 tsp. Maple syrup
Salt
Olive oil
Condiments:
Sliced monterey jack cheese
Lettuce like romaine or iceberg
Sliced tomato
Thinly sliced red onion
Mashed avocado with salt and 1 tsp. fresh lemon juice
1 tbsp. Butter

Directions:
Mix the mayo, bbq sauce, paprika, onion powder, garlic powder, apple cider vinegar, and maple syrup in a bowl and set aside.

Slice up the tomato, onion and tear the lettuce so it is ready to go. Place the avocado in a bowl and mash it up with a fork while adding salt and fresh lemon juice. Set aside.

Trim up the chicken thighs removing excess fat with a knife and cut if necessary to lay flat. Place thighs in a dish and add 3 to 4 tablespoons of the bbq sauce to coat the thighs. Use your clean hands to toss it together.

Preheat a large cast iron pan over medium high heat and add just enough oil to coat the bottom of the pan. Swirl the oil around once it gets hot. Heat a second pan over low heat. This pan will be used to toast up the rolls.

Once the large pan is hot, lay the thighs in the and and don't move them. Let them cook for about 4 - 5 minutes and you see a nice crust forming.

Turn the thighs over and cook them another 4 minutes or until the internal temperature reaches 165 degrees F. Now is the time to add cheese to the top of the chicken if you are doing so.

When done, place the thighs on a clean plate. I usually toast the buns when I turn the chicken thighs over. Place a couple of tsp. of butter on the pan and when it melts, rub the inside of the buns in the butter. When they get toasted, they are done.

To assemble the chicken sandwich, spread a smattering of bbq sauce on the bottom bun, then add the chicken topped with melted cheese. Top with lettuce, tomato, onion and mashed avocado to finish up this glorious sandwich. Enjoy!
