Paprika tsp. saltWet Station Ingredients: cup plain yogurt, I used Clover organic cup milk1 Tbsp. cornstarchPanko Crumbs Station Ingredients1 cups of Aleias gluten free Panko crumbs tsp. Garlic powderPinch of salt1 large onion, ends removed, peel removed, cut into inch thick rings, separated Avocado oilDirections:Combine the ingredients for the dry station in a pie plate and combine with a whisk.Combine the wet ingredients in a bowl and combine with a whisk.Combine the breadcrumb station and mix with a fork.Prepare a baking sheet with parchment paper and line the stations up for dipping.Prepare the onion by cutting the ends off and peeling the onion. Slice into inch rounds and separate the pieces using your fingers. Try not to break the rings if possible.Lets start coating those onion rings. Take one ring and dip it into the liquid bowl until fully coated. Let the excess drip off and then place it into the dry plate. Use a fork or spoon to help coat the onion. Make sure all surfaces are coated. Tap the onion on your spoon to remove any excess flour.Dip the onion back into the liquid again (very important) to coat a second time. Let the excess drip off. Then finish by placing the onion into the panko crumbs and coat all sides.Lay the coated onion ring on the baking sheet and repeat the process with all the other rings. At the stove, preheat a medium frying pan over medium high heat. Place avocado oil in the pan about an inch deep. Please use an instant read thermometer to make this recipe. Youll thank me for it later. Once your thermometer reaches 370 degrees F. its time to place the onion rings in the pan. Only place a few and dont overcrowd as you may mess up the coating. The temperature may drop some so monitor it and raise the heat if it does. The onion ring should cook about 1 to 2 minutes in the oil. If it takes longer, or doesnt bubble up when you first put it in, it means your oil is not hot enough. This can result in soggy onion rings that absorb more oil than you might like. Turn them over when they turn golden brown and cook on the second side about the same amount of time. Remove to a paper towel covered plate to drain and cool.Oil Tip:If you love this recipe and you want to make these again, let the oil cool in the pan and then pour it into a container or as I did into another pan. I was using it the next day so no problem. You will notice a lot of black particles in the bottom of the pan. Let them settle and carefully pour off the oil leaving them behind. Then you can pour the black left overs into the garbage can and wipe the pan out with paper towels. If you are planing to keep the oil for an extended time, place it in a container with a tight fitting lid. No sense in throwing away good oil.
