Melting Donuts Recipe: IngredientsDonuts430g (15 oz) plain (all-purpose) flour265 g (91/2 oz) caster (superfine) sugar3 teaspoons baking powder 1/2 teaspoon fine salt 125 g (41/2 oz/1/2 cup) unsalted butter, softened2 large eggs375 ml (121/2 fl oz/11/2 cups) full-cream (whole) milk125 ml (4 fl oz/1/2 cup) vegetable oil2 tablespoons Greek yoghurt (or sour cream)1 teaspoon vanilla extract or vanilla bean paste1 tsp peppermint extract or to tasteCake balls4 tbsp canned vanilla buttercreamDecorations50g pink fondant20g orange fondant500g white chocolate, melted100g dark chocolate, meltedStepsDonutsPreheat a fan-forced oven to 140°C (275°F) or a conventional oven to 160°C (320°F). Spray a large donut baking tray with oil spray and set aside. Do the same with a Add the flour, sugar, baking powder and salt to a large mixing bowl and mix with a hand mixer until well combined.Next, add the softened butter and mix on low speed until the mixture reaches a crumbly, sand-like texture.Add the eggs, milk, peppermint extract, oil, yogurt, and vanilla, and mix on low speed until all the dry ingredients are incorporated. Scrape down the side of the bowl and mix for a final 20 seconds. Add the batter into a piping bag. Pipe each batter into the donut tray.Pipe the batter into the donut baking tray. Bake for 20 minutes, allow cooling for 10 minutes before carefully turning upside down onto a cooling rack to cool completely.Add the remaining batter into the 5” cake tin and bake for 30 minutes. Allow cooling completely.Cake BallsOnce the cake has cooled, use your hands or a food processor to crumble the cake into a large mixing bowl. Add the vanilla frosting and use a spoon to mix until well combined. You’re not going to use all of this mixture. But you can freeze any left-over mixture to have ready to use when you wish. Make 6 cake balls about half the size of a golf ball. Place on top of a baking tray and chill in the fridge for one hour.Place a large piece of baking paper on your workbench. Pipe 6 little dots of melted dark chocolate for each donut. To make the scarves, roll out some pink fondant and cut out some strips. Cut those strips in half. Use a sharp knife to cut the ends of 6 strips to act as the ends of each scarf.To make the little carrot noses simply roll into little pieces of orange fondant and then turn them into a carrot shape using the palm of your hand.Pipe melted chocolate on top of each donut. Place a cake ball on top of each donut and pipe more melted chocolate on top. Gently tap the tray on top of your workbench to smoothen out the melted white chocolate. Add the little fondant carrot in different spots of each donut. Somewhere near the face is preferable. Then add the end of each scarf near the neck and wrap another piece on top of that around the neck.
