Tim Ho Wan Inspired Curry Luncheon Meat & Potatoes
Serves 4 pax

INGREDIENT LIST


400g (14.1 oz) potatoes, cut into small cubes
100g (3.5 oz) red onion, chopped (can be replaced with yellow onion or shallots)
1 pinky length cinnamon bark
3 cloves garlic, grated
1/2 thumb-sized young ginger, grated
600ml (20.3 fl oz) water
0.5 chicken stock cube
400g (14.1 oz) luncheon meat, cut into small cubes
1 tsp sugar
1 tsp salt
Some cornstarch solution (optional)

Curry paste

2.5 tbsps meat curry powder
1 tbsp chilli powder (reduce if your child doesnt take spicy food)
Some water to form a curry paste
