Tomato Peanut ChutneyTomato Peanut chutney is a little twist to the regular peanut chutney. Its a very good accompaniment to all Indian tiffins like Idly, Dosa and Upma varieties. Can be had with rice as well. Try it and you will love it!!!Ingredients:Peanuts- 1/2 cupGarlic cloves-3Pearl onions-4Red chillies-5Tomatoes-2Tamarind- A little pieceShredded coconut- 1/4 cupSalt-1 teaspoonOil- 3 teaspoonMustard seeds- 1 teaspoonCurry leaves- for garnishingDescriptions:1. Sauté peanuts, garlic cloves, pearl onions and red chillies in 1 tsp oil until garlic and peanuts are well roasted. Set aside.2. Saute 2 tomatoes until cooked. Add little tamarind and sauté for a minute. Switch off the flame.3. Grind everything with 1 tsp salt and coconut into a fine paste.4. Heat 2 tsp oil. Add mustard seeds. Let them splutter. 5. Add the ground chutney and mix well. Garnish with curry leaves.
