Tomato Peanut Chutney

Tomato Peanut chutney is a little twist to the regular peanut chutney. Its a very good accompaniment to all Indian tiffins like Idly, Dosa and Upma varieties. Can be had with rice as well.

Try it and you will love it!!!

Ingredients:
Peanuts- 1/2 cup
Garlic cloves-3
Pearl onions-4
Red chillies-5
Tomatoes-2
Tamarind- A little piece
Shredded coconut- 1/4 cup
Salt-1 teaspoon
Oil- 3 teaspoon
Mustard seeds- 1 teaspoon
Curry leaves- for garnishing

Descriptions:
1. Sauté peanuts, garlic cloves, pearl onions and red chillies in 1 tsp oil until garlic and peanuts are well roasted. Set aside.
2. Saute 2 tomatoes until cooked. Add little tamarind and sauté for a minute. Switch off the flame.
3. Grind everything with 1 tsp salt and coconut into a fine paste.
4. Heat 2 tsp oil. Add mustard seeds. Let them splutter.
5. Add the ground chutney and mix well. Garnish with curry leaves.
