How To Preserve Lemons
The first thing you can do is store them correctly by placing them in a zip loc bag. Remove as much air as possible then zip them up.

Tip #1.
Make sure to buy organic lemons. Zest them into a mason jar and be sure not to pack it down. You want the zest to be light and fluffy so that when you go to use it, you can easily scoop out a pinch. The zest should keep frozen for 3 to 4 weeks.

If you want to keep the lemon whole after zesting, you can wrap it tightly in saran wrap and then place it in the fridge for 1 to 3 days. Lemon zest which contains the lemon oils has 5 to 10 times more vitamins than the juice!
You can add the zest to just about anything: on top of your salad, on veggies, chicken, pasta, oatmeal, and more. I put about a teaspoon of it in my smoothies!

Tip # 2.
Juice the lemons by putting the juice in an ice cube tray. The cubes in my tray hold 2 Tablespoons each. Feel free to fill them full or even half full depending on your needs. I used a lemon press to get the juice out. You can also use a reamer or even an electric juicer which comes in handy when juicing a lot of lemons. After the lemon cubes become frozen, place them in a zip loc bag.

Tip # 3
You can slice lemons and place them on a parchment paper lined baking sheet. Once frozen you can place the slices in a zip loc bag for at least 3 to 4 months if they are stored properly and even longer though they might lose some of their flavor.
Lemon slices can be used in a variety of dishes like chicken and fish. They can also be used in drinks like tea, margaritas, lemonade etc.

Tip # 4
Preserve lemons (called cured lemons or lacto-fermented) with salt. Take a whole lemon and slice it lengthwise but not all the way through so that the lemon stays in one piece. Add about 1 Tbsp of salt to each lemon, sprinkling the salt on the inside of the lemon. Place the lemons in a quart size mason jar until it is jammed full. Then add water to the jar until they are fully submerged. Add any seasonings you wish to the jar. I added some whole peppercorns and 1 bay leaf. Then place the lid on the jar and set the jar on the counter for 3 to 4 weeks. Yes you heard that right, 3 to 4 weeks. After that time, you can use the lemon peel in many recipes like pasta, fish etc. Just remember to rinse the salt off the lemons prior to use. Then slice the lemons where you separate the peel from the flesh. Then slice up the peel which is the part you will use. It will be tender and flavorful.
Bonus Tip:
Place any left over lemon halves in a microwave safe dish with about 1 cup of water. Heat on high heat for 5 minutes. Remove from microwave and then wipe out your microwave with a towel. It will be easy to remove any grime and will smell amazing!
