Try them out.Ingredients:2 cups gluten free flour, I used Bobs Red Mill 1 to 1 gluten free flour2 tsp. Ground ginger2 tsp. Baking soda1 tsp. Ground cinnamon tsp. Ground cloves tsp salt cup butter, pasture raised, browned1 cup dark brown sugar, packed1 egg, pasture raised cup molasses heaping cup crystalized ginger, finely chopped tsp. Vanilla extractDirections:Preheat oven to 350 degrees F.Brown the butter by placing it into a stainless steel saucepan over medium heat. Stir constantly as the butter bubbles and the water evaporates. Watch the butter close and when you notice the butter turning brown, take it off the heat and pour the butter into another dish so it will stop cooking.Let the butter cool about 20 minutes. Combine the dry ingredients in a medium size bowl. This includes the flour, ground ginger, cinnamon, cloves, salt, and the baking soda. Stir to combine the ingredients.In a large mixing bowl add the butter, and the brown sugar and mix with hand mixer or kitchenaid until incorporated.Then add the eggs, molasses, vanilla extract, and the fresh ginger. Mix again with the hand mixer until combined.Add about of a cup of the dry mixture at a time and mix with the beaters until the flour is almost blended in. Then add the next cup and blend again. Half way through adding flour, add the crystalized ginger, sprinkling it all around. Blend again until all the flour is mixed in.Make 1 inch sized balls out of the dough and place them on a parchment paper covered baking sheet about an inch apart.Bake for 10 - 12 minutes or until done. The longer you cook these, the crispier they get.
