TUNA SALAD; A MARVELLOUS SUMMER DISH

FULL RECIPE FOR MEDITERRANEAN STYLE TUNA SALAD
Ingredients

~400 g (3 cans) flaked white tuna
~340 g (1 can) whole kernel corn
2 spring onions
7-8 sprigs fresh dill
1 yellow bell pepper
1 red bell pepper
3-4 dill pickles (*)
2 medium-sized apples

For dressing
1 lemon
5 tbsp extra virgin olive oil
3 tbsp mayonnaise
1 tbsp mustard
1 tsp salt
tsp ground black pepper

For serving
1 lettuce

Directions

DRESSING
Set a large bowl; squeeze the lemon and pour into the bowl
Add 5 tbsp of olive oil, 3 tbsp of mayonnaise, 1 tbsp of mustard, tsp of ground black pepper and 1 tsp of salt into the bowl.
Whisk the ingredients thoroughly then set aside.

TUNA SALAD
Open the canned tuna and drain the extra liquid using a strainer; then place into the bowl and combine with the dressing thoroughly
Open the canned corn and drain its extra liquid using a strainer; then add to the tuna-dressing mixture
Wash and halve the yellow and red bell peppers, discard the seeds and stems
Then cut the bell peppers into small pieces and add to the bowl
Wash the spring onions discarding the roots, cut into small pieces and add to the bowl
Wash and mince the dill sprigs then add to the bowl.
Choose unsweetened dill pickles. Cut the dill pickles into small pieces; add into the bowl
Finally, wash the apples discard the core of the apple and cut into small pieces; add to the bowl
Mix the ingredients gently and thoroughly
You can serve the salad directly or save it in the refrigerator for a couple of hours

SERVING
Tuna salad is a flavourful cold dish. With the addition of lettuce it is turn into a crunchy freshness.
Set a salad plate for each portion
Use fresh lettuce as bedding for the tuna salad
Place the tuna salad over the lettuce and add more dill as garnish
Then serve cold and fresh.
