Turkey Fried Rice Recipe
Ingredients:
lb. ground turkey
1 heaping cup of carrots, diced
2 pastured eggs, whisked in bowl
1 heaping cup broccoli, cut up
cup peas, frozen
2 cups brown rice, cooked
1 bunch swiss chard, chopped
onion, diced
1 tsp. Fresh ginger, minced
2 cloves garlic, minced
2 Tbsp. Avocado oil
Red pepper flakes, optional

Sauce:
4 Tbsp Tamari or soy sauce
4 Tbsp. rice vinegar
1 tsp. Sesame oil
1 Tbsp. natural peanut butter
2 tsp. Sweet Red Chile Sauce

Garnish
Sliced almonds
Sliced green onion

Directions:
Place all of the sauce ingredients in a small saucepan over medium low heat. Stir until the peanut butter dissolves. Set aside.

Heat a large frying pan over medium high heat and add the avocado oil. Toss in the onion and the carrots. Saute for about 5 minutes stirring frequently.

Next add in the ground turkey and break it up into small pieces. Then add the ginger and garlic and cook, stirring frequently, until the turkey is no longer pink and is done.

Add the sauce to the frying pan and stir. Then add the broccoli, peas, and chard. Stir again to combine all the ingredients. Cover the pan and let it cook for 3 - 4 minutes.

Remove the lid and and make a hole in the middle of the pan with your spatula pushing all the veggies and turkey to the outside of the pan.

Pour the whisked eggs in the middle of the pan and scramble. Once the eggs are cooked mix them into the rest of the ingredients. Add the rice, and some red pepper flakes and stir until everything is combined.

Serve this by garnishing with some sliced almonds and green onion. Enjoy!
