INGREDIENTS
Apple Giardiniera:
1 cup (240ml) water
1 cup (240ml) rice wine vinegar
1 tablespoon plus 1 1 ⁄ 2 teaspoons kosher salt
2 teaspoons maple syrup
1 whole star anise
3 bay leaves
1/2 bulb fennel
2 Gala or Fuji apples
1 jalapeño, stemmed

Chicken & Broccoli Meatballs and Subs:
1 head broccoli
6 garlic cloves, smashed
1 tablespoon vegetable oil
1 pound (450g) ground chicken, or 11 ⁄4 pounds boneless, skinless chicken thighs (570g), for grinding
1/2 cup (30g) panko bread crumbs
1 egg
1 tablespoon grated Parmesan
1 tablespoon maple syrup
1 1/2 teaspoons kosher salt
4 hero rolls, split lengthwise
2 tablespoons mayonnaise
1/4 bunch cilantro
