Varicha Bhaat & Shengdana Amti | Upvas Special | Maharashtrian Recipe by Archana in Marathi | Ruchkar Mejwani

Learn how to make Maharashtrian style Varicha Bhaat and Shengdana Amti, a traditional Upvas main course recipe from our chef Archana on Ruchkar Mejwani.

Ingredients For Varicha Bhaat:

250 gms Vari Tandool (Vari Rice Grains)
1 tbsp Ghee
1 tsp Cumin Seeds
2 Cups Water
Salt to taste

Ingredients For Shengdana Amti:

For Masala Paste
1 Cup Grated Fresh Coconut
4 tbsp Peanut Powder
2 Green chillies
1/2 tsp Cumin Seeds
Water

For Tadka
1 tsp Ghee
1/4th tsp Cumin Seeds
3 tbsp Peanut Powder
Salt to taste
Water

Method:

To make the Varicha Bhaat
- In a pan heat some ghee.
- Add cumin seeds. Once they start spluttering add the rice grains. Mix well.
- Add enough water and salt. Give a stir.
- Cover it with a lid and let the rice cook for 10 minutes on low flame.
- Varicha Bhaat is ready.

To make the Shengdana Amti
- In a mixer grinder add fresh coconut, peanut powder, green chillies, cumin seeds and little water. Grind everything to a smooth paste. Keep this masala paste aside.
- In a pan heat some ghee.
- Add cumin seeds. Let them splutter.
- Then add the masala paste. Mix well.
- Add peanut powder, salt and water. Mix everything well.
- Let it come to a boil.
- Shengdana Amti is ready.
