Learn how to make Maharashtrian style Varicha Bhaat and Shengdana Amti, a traditional Upvas main course recipe from our chef Archana on Ruchkar Mejwani.Ingredients For Varicha Bhaat:250 gms Vari Tandool (Vari Rice Grains)1 tbsp Ghee1 tsp Cumin Seeds2 Cups WaterSalt to tasteIngredients For Shengdana Amti:For Masala Paste1 Cup Grated Fresh Coconut4 tbsp Peanut Powder2 Green chillies1/2 tsp Cumin SeedsWaterFor Tadka1 tsp Ghee1/4th tsp Cumin Seeds3 tbsp Peanut PowderSalt to tasteWaterMethod:To make the Varicha Bhaat- In a pan heat some ghee.- Add cumin seeds. Once they start spluttering add the rice grains. Mix well.- Add enough water and salt. Give a stir.- Cover it with a lid and let the rice cook for 10 minutes on low flame.- Varicha Bhaat is ready.To make the Shengdana Amti- In a mixer grinder add fresh coconut, peanut powder, green chillies, cumin seeds and little water. Grind everything to a smooth paste. Keep this masala paste aside.- In a pan heat some ghee.- Add cumin seeds. Let them splutter.- Then add the masala paste. Mix well.- Add peanut powder, salt and water.
