Veg.Biriyani (Instant Pot Method):

Quick and easy one pot Vegetable Biriyani recipe!!!! It is easy to make, flavorful and so aromatic!!!

The traditional Dum biriyani recipe takes more than 40 minutes to cook. You can prepare the same flavorful biriyani in less than 20 minutes using Instant pot.


Ingredients:

Basmati rice- 1.5 cups
Ghee-2 tablespoons
Oil- 3 tablespoons
Bay leaves-2
Cinnamon stick-1
Cloves-4
Cardamom-4
Star Anise -1
Fennel seeds- 1 teaspoon
Onion (big)-1
Ginger garlic paste- 1 tablespoon
Tomatoes(Big)-1
Turmeric powder-1 teaspoon
Salt-1 teaspoon
Red chilly powder-1 teaspoon
Coriander powder- 2 teaspoons
Biriyani masala powder- 2 tablespoons
Yogurt/Curd- 1/2 cup
Carrots-2
Beans-10
Potatoes-3
Cauliflower florets-15
Coriander/Mint leaves-As needed
Water- 2.75 cups
Saffron-4 strands (optional)
Fried bread cubes-(optional)-for garnishing


Description:

1. Soak basmati rice in water for 30 minutes.
2. Set instant pot on sauté mode.
3. Heat ghee and oil. Add all masala items. Sauté for 30 seconds.
4. Add onion and sauté till golden brown. Then add ginger garlic paste and sauté for 30 seconds.
5. Add tomatoes and sauté till soft.
6. Add and cook all masala powders until the raw smell goes away.
7. Add 1/2 cup yogurt and mix immediately.
8. Add all vegetables and stir till the vegetables are coated with the masalas.
9. Set aside a portion of the vegetables to make layers.
10. Strain the water from the soaked basmati rice. Spread half of the rice(3/4 cup) over the vegetables. Sprinkle coriander/mint leaves.
11. Again make the layer with vegetables, rice and coriander/mint leaves.
12. Pour 2.75 cups water. Make sure rice is completely immersed in water.
13. Close the lid. Set the instant pot on manual mode for 6 minutes.
14. When the beeper sounds, quick release the pressure manually.
15. Garnish with fried onions and fried bread cubes. (Optional).

Serve with onion raita.
