This bread vada made with the healthy addition of mixed vegetables is something that your kids will definitely love eating.

VEG BREAD VADA

Ingredients

1 cup fresh breadcrumbs
Oil for deep-frying
½ medium yellow capsicum, finely chopped
¼ medium cabbage, finely chopped
¼ medium bunch fresh fenugreek (methi) leaves, chopped
1-2 green chillies, finely chopped
¼ teaspoon turmeric powder
½ teaspoon garam masala powder
Salt to taste
½ teaspoon dried ginger powder
7-8 raisins, crushed
5-6 cashewnuts, chopped
3-4 tablespoons gram flour (besan)

Method

1. Heat sufficient oil in a kadai.
2. Mix together breadcrumbs, yellow capsicum, cabbage, fenugreek leaves, green chillies, turmeric powder, garam masala powder, salt, dried ginger powder, raisins and cashewnuts in a bowl.
3. Add gram flour, 1 tablespoon oil and 1-2 tablespoons water and mix till well combined.
4. Divide the mixture into small equal portions and shape into vadas.
5. Deep-fry the vadas in hot oil till golden brown and crisp. Drain on absorbent paper.
6. Serve hot.
