Vegetable Pulao In Microwave | Simple Vegetarian Khana With Chef Saurabh | Sanjeev Kapoor Khazana

Vegetable pulao is everyone's go to food. Now, made even easier by cooking it in the microwave, this dish doesn’t lose any flavour.

VEGETABLE PULAO IN MICROWAVE

Ingredients

½ small cauliflower, cut into small florets
5-6 French beans, cut into ½ inch pieces
1 medium carrot, peeled and cut into small pieces
1½ cups basmati rice, soaked for 30 minutes
2 tablespoons ghee
1 teaspoon cumin seeds (jeera)
5-6 black peppercorns
3-4 green cardamoms
1 inch cinnamon
1 bay leaf
Salt to taste
2-3 tablespoons frozen green peas
Fresh coriander leaves for garnishing

Method

1. Mix together ghee, cumin seeds, peppercorns, green cardamoms, cloves, cinnamon and bay leaf in a large microwave proof bowl and cook in microwave on high (100%) for 1 minute.
2. Add cauliflower florets, French beans, carrot, drained rice, 3 cups water and salt and mix. Cover with a cling film, prick using a knife and cook in microwave on high (100%) for 12-14 minutes.
3. Discard the cling film, add green peas, mix, again cover with a cling film and cook in microwave on high (100%) for 1 minute.
4. Serve hot garnished with coriander leaves.
