Vegetable Rice Tikki In Gujarati | Snacky Ideas by Amisha Doshi | Sanjeev Kapoor Khazana

Sauteed fresh cut vegetables mixed with rice, cottage cheese and raw banana mixture to make these delicious tikkis.

VEGETABLE RICE TIKKI

Ingredients

1 cup cooked rice
1-2 tablespoons oil
1 green chilli, finely chopped
1 tablespoon finely chopped French beans
¼ medium green capsicum, finely chopped
¼ medium yellow capsicum, finely chopped
1½ tablespoons finely chopped purple cabbage
1 tablespoon boiled green peas
1 tablespoon boiled sweet corn kernels
Salt to taste
A pinch of sugar
1 teaspoon garam masala powder
1 teaspoon chaat masala + for sprinkling
2-3 tablespoons grated cottage cheese (paneer)
¼ cup boiled and mashed raw bananas
1 tablespoon green chutney
1 tablespoon chopped fresh coriander leaves
1 tablespoon refined flour (maida)
Oil for greasing and deep-frying
Semolina (suji) for coating
Fresh coriander sprigs for garnishing

Method

1. Heat oil in a non-stick pan. Add green chillies, French beans and sauté for a few seconds. Add green capsicum, yellow capsicum, cabbage, green peas, corn kernels, mix well and cook for a minute.
2. Add salt, sugar, garam masala powder and chaat masala and mix well. Add cottage cheese and mix well. Remove from heat and transfer to a bowl.
3. Mix together rice, raw bananas, salt, green chutney and coriander leaves in another bowl. Add flour and mix well.
4. Grease your palms with some oil. Divide the rice mixture into equal portions, place some vegetable mixture in the centre, bring the edges together and shape into tikkis.
5. Heat sufficient oil in a kadai.
6. Coat the tikkis in semolina and deep-fry in hot oil till golden brown and crisp. Drain on absorbent paper.
7. Sprinkle some chaat masala on top, garnish with coriander sprigs and serve with green chutney.
