Walnut cake Vegan and Greek (karydopita)

Walnut cake / Karydopita

In a large bowl, mix
2 cups of grossly chopped walnuts
1 cup semolina
1 cup breadcrumbs
1/4 cup sugar
1 tsp baking powder
1 tsp baking soda
1 cup orange juice
1/2 cup olive oil
1/2 cup cognac liqueur
1 tsp cloves
1 tsp cinnamon
Bake for 45 minutes at 180 C / 350 F
Meanwhile prepare the syrup
1 cup water
2 cups sugar
The juice of half a lemon
Boil and then lower heat. Let simmer for 10 minutes

When the cake is ready, pour syrup over it and wait for it to be absorbed. Serve when at room temperature.
