Whole Fish with Green Onions will be one of the choices for my Chinese New Year celebration. You may substitute with fish filet. Fish in Chinese, Yu sounds the same as another word Yu, which means abundance. Wish everyone a happy, healthy, and prosperous year of the OX!

1 whole fish (pomfret, tilapia, or sea bass), over 1 lb
8 stalks of green onions
1 piece of ginger
6 cloves garlic
6 fresh or dried chili peppers, optional
1 tsp Sichuan peppercorns, optional
Light Soy Sauce
Black Vinegar
Shaoxing Cooking wine
Canola or vegetable oil
