WINTER SALADS: COLOURFUL, FLAVOURFUL, HEALTHFUL WINTER TREASURES

FULL RECIPE FOR WINTER SALADS
Ingredients
ROOT CELERY SALAD
1 large (~700g) root celery
1 cup yogurt
cup olive oil
2 tbsp mayonnaise
1 tbsp mustard
tbsp. salt
tbsp. ground black pepper
1 lemon (juice only)
For serving:
1 apple
2 garlic cloves
3-4 walnuts

RED CABBAGE SALAD
1 medium-sized (~1 kg)red cabbage
cup apple vinegar
1 tbsp salt
For serving
2 tbsp olive oil

CARROT SALAD
1 kg carrots
For serving (lemon sauce)
1 lemon (juice only)
cup olive oil
1 tsp salt
1 tsp mustard

Directions
ROOT CELERY SALAD
Choose a heavy and firm celery root and wash it before processing
Discard its end-roots and the spongy parts in its center
Divide the celery into 4 pieces to peel easily
Then, submerge in water to preserve its white colour
Prepare the sauce:
In a large bowl, mix tbsp. of salt, tbsp. of ground black pepper, 1 tbsp of mustard, 2 tbsp of mayonnaise, 1 cup of yogurt, the juice of 1 lemon, and cup of olive oil
Whisk the ingredients together to obtain a smooth yogurt sauce
Use a fine grater for grating the celery root
Grate the celery root directly into the yogurt sauce and combine the sauce with the shredded celery from time to time to prevent browning
Once the celery and sauce are thoroughly combined, store the salad in a sealable jar, in the refrigerator
The ROOT CELERY SALAD can keep its freshness for up to 10 days

RED CABBAGE SALAD
Wash the red cabbage and divide into 4 equal pieces
Discard the hard stem and the soft or withered outer leaves
Then, slice the cabbage as thinly as possible
Place the cabbage slices into a large bowl and wash them thoroughly
Drain the excess water, then, place them into a large bowl
Add 1 tbsp of salt and roughly massage the cabbage slices using your hands for 5 to 7 minutes, or until the pieces become softer
Then, add cup of apple vinegar and continue massaging for 2 more minutes
Its blue-purple colour will turn into an amazing pink-purple colour due to the acidic vinegar
Place the Red Cabbage Salad into a sealed jar and store in the refrigerator
RED CABBAGE SALAD is kind of pickleso, time will enhance its flavor!

CARROT SALAD
Wash and peel the carrots, discard both ends of each carrot
Shred the carrots using a large grader
Then, place the shredded carrots into a clean jar and seal it
Shredded carrots remain fresh for up to 7 days in the refrigerator if it is free of sauce

SERVING
ROOT CELERY SALAD can be served as is!
You can also enhance its flavor by adding more ingredients:
Peel and apple and shred it into a bowl
Mince 2 garlic cloves and add into the bowl
Mince 2 to 3 walnuts and add into the bowl
Add ~ 2 cups of Root Celery Salad into the same bowl
Thoroughly mix the ingredients and transfer into a serving dish
Decorate the Root Celery Salad with walnuts
Now, you can serve it as a salad, side dish, or a meze!!

RED CABBAGE SALAD can be served just the way it is!
However!... Adding a bit of olive oil transforms this flavor explosion into a smooth companion!!

CARROT SALAD is served with its lemon sauce:
Mix the juice of 1 lemon with 2 tbsp of olive oil, 1 tsp of salt, and 1 tsp of mustard in a sauce bottle
Then, shake the ingredients well
Place the shredded carrots into a serving dish
Add the lemon sauce to complete the CARROT SALAD and serve!!

You can also serve these colourful salads on the same plate, over a bed of fresh spring greens
Place the Root Celery Salad, the Carrot Salad, and the Red Cabbage Salad over the fresh greens based on your desire and add the lemon sauce
These glorious colours and assorted flavours turn a simple salad into a rich Winter Banquet!!
