WONTON CHAAT

Ingredients

12-15 wonton sheets
Oil for deep-frying
1 medium potato, peeled, cut into small cubes and boiled in turmeric water
¼ cup chickpeas, boiled
1 medium tomato, finely chopped
1 medium onion, finely chopped
Salt to taste
½ teaspoon chaat masala + for sprinkling
Black salt to taste
A pinch roasted cumin powder + for sprinkling
¼ teaspoon red chilli powder
Juice of ½ lemon
Whisked yogurt for drizzling
Green chutney for drizzling
Date-tamarind chutney for drizzling
Garlic chutney for drizzling
Fresh pomegranate pearls for topping
Fresh coriander sprigs for garnishing

Method

1. Heat sufficient oil in a kadai.
2. Roll the wonton sheets, slice and open to get thin strips.
3. Deep-fry the wonton strips in hot oil till golden brown and crisp. Drain on absorbent paper.
4. Take half of fried wonton strips in a bowl. Add potato cubes, chickpeas, tomato, onion, salt, chaat masala, black salt and cumin powder and mix lightly.
5. Add chilli powder and lemon juice and mix lightly.
6. Put prepared wonton strip mixture in individual serving platters. Drizzle some yogurt, green chutney, date-tamarind chutney and garlic chutney on top.
7. Sprinkle some cumin powder, chaat masala and top with some pomegranate pearls.
8. Crushed the remaining fried wonton strips and top the chaat with it.
9. Serve immediately garnished with coriander sprigs.
