WONTON CHAATIngredients12-15 wonton sheetsOil for deep-frying1 medium potato, peeled, cut into small cubes and boiled in turmeric water¼ cup chickpeas, boiled1 medium tomato, finely chopped1 medium onion, finely choppedSalt to taste½ teaspoon chaat masala + for sprinklingBlack salt to tasteA pinch roasted cumin powder + for sprinkling¼ teaspoon red chilli powderJuice of ½ lemonWhisked yogurt for drizzlingGreen chutney for drizzlingDate-tamarind chutney for drizzlingGarlic chutney for drizzlingFresh pomegranate pearls for toppingFresh coriander sprigs for garnishingMethod1. Heat sufficient oil in a kadai.2. Roll the wonton sheets, slice and open to get thin strips.3. Deep-fry the wonton strips in hot oil till golden brown and crisp. Drain on absorbent paper. 4. Take half of fried wonton strips in a bowl. Add potato cubes, chickpeas, tomato, onion, salt, chaat masala, black salt and cumin powder and mix lightly.5. Add chilli powder and lemon juice and mix lightly. 6. Put prepared wonton strip mixture in individual serving platters. Drizzle some yogurt, green chutney, date-tamarind chutney and garlic chutney on top.7. Sprinkle some cumin powder, chaat masala and top with some pomegranate pearls. 8. Crushed the remaining fried wonton strips and top the chaat with it. 9. Serve immediately garnished with coriander sprigs.
