INGREDIENT LIST

Coated tofu

1 egg
0.5 tsp salt
A few dashes white pepper
0.5 tbsp cornflour + 1 tbsp water to form a cornstarch slurry
220g (7.76 oz) firm tofu, cut into bite-sized pieces

Marinated fish

40ml (1.35 fl oz) water
1 stalk of spring onion, stem part only
5g (0.17 oz) young ginger, julienned
A few dashes of white pepper
0.5 tsp salt
1 tbsp cornflour
280g mackerel fish or other fish with fewer bones

Sauce

200ml (6.76 fl oz) water
1 tbsp oyster sauce
1 tbsp light soy sauce
1 tbsp premium dark soy sauce
1 tsp sugar
A few dashes of white pepper
0.5 tbsp cornflour
0.5 tbsp sesame oil

Other ingredients

20g (0.71 oz) young ginger, sliced
7 shallots, cut into halves
7 cloves garlic
1 stalk of spring onion
