Zero Waste Lasagna Non Traditional, Vegan, Enough To Feed An Army

Get really stuck into this week's video, an unusually immersive vegan lasagna recipe (using footage from my phone, originally shot in a different aspect ration). It is far from the classic lasagna recipe, made using ingredients I needed to use up at home, and using plant-based ingredients. Incredibly tasty, pretty easy to make and full of flavour.

Ingredients
For the mince sauce:
1 tbsp olive oil
10 spring onions, chopped
5 cloves garlic, chopped
2 courgettes, diced
800g vegan mince meat
2 packs tomato passata (approx. 1kg)
2 tbsp tomato paste
Salt, to taste
Pepper, to taste
1 tsp Old bay seasoning
1 tsp Thyme
1 veg stock cube

For the vegan cheese sauce:
3 heap tbsp vegan butter
60g plain flour
800ml coconut milk
70g grated vegan cheese
Salt, to taste
Coarse ground pepper, to taste

250g lasagna sheets
Grated vegan cheese
