This zucchini pasta with pesto and butternut squash is one of my favorite dishes. The zucchini is the pasta. Plus it has turkey for protein and butternut squash provides the sweetness. Take kitchen shears and cut the long strands of zucchini into a reasonable length (10 inches long).Cook the squash in a steamer until it is fork tender, about 7 to 8 minutes. Remove it to a bowl to keep warm.In a large frying pan, add 2 tsp. of olive oil to the pan over medium high heat and add the ground turkey, salt, pepper, Thyme and Rosemary. Cook until the turkey is no longer pink. Pour the cooked turkey into a bow and set a side and keep warm.In this same pan, add 2 Tbsp. of olive oil and the onion over medium low heat. Saute for a good 10 minutes or until the onions have reduced and are a golden brown. Once the onion are done, add another Tbsp. of olive oil and add the zucchini and saut this until the zucchini is slightly softened, about 6 to 7 minutes. You want the zucchini to be el dente and not mushy.Once the zucchini is el dente, add the pesto sauce and toss to combine. Then add the ground turkey and stir to coat.
