Zucchini and Sweet Potatoes with Cashew Cream

I don't know how I've lived without cashew cream! So creamy and delicious and SO versatile. I can't wait to bake with it! This is my recipe for a fast meal and to make it interesting - the cashew cream! Sauted onion, zucchini and sweet potatoes, on a bed of eggs, topped with the luscious cashew cream. My, oh, my. Can be used without the eggs and just as a side dish. Cashew Cream is a great substitute for people who are unfortunately lactose intolerant and vegans!

Cashew Cream:
1 cup cashews
3/4 cup of water (plus more for soaking)
***I forgot to mention this in the video: You can adjust the water depending on the consistency you'd like. I liked mine a little chunkier, but if you add more water, it really will look like cream!***

Other ingredients to serve 2 people:
Eggs (however many you'd like per person)
1 small onion
2 small zucchini
2 small sweet potatoes
Fresh basil
1/2 tsp salt/pepper
1/2 tsp cumin (optional)
