I don't know how I've lived without cashew cream! So creamy and delicious and SO versatile. I can't wait to bake with it! This is my recipe for a fast meal and to make it interesting - the cashew cream! Sauted onion, zucchini and sweet potatoes, on a bed of eggs, topped with the luscious cashew cream. My, oh, my. Can be used without the eggs and just as a side dish. Cashew Cream is a great substitute for people who are unfortunately lactose intolerant and vegans!Cashew Cream:1 cup cashews3/4 cup of water (plus more for soaking)***I forgot to mention this in the video: You can adjust the water depending on the consistency you'd like.
