Air Fryer Recipe: Charred Eggplant Balado with Sweet Labneh and Asian Dukkah #shorts

Pretty fancy for an eggplant in air fryer recipe

Ingredients:
Balado Marinade:
Salt to taste
5 large Red chillies about 120 g (about 4.2 oz)
5 Thai red chillies (or any birds eye type) about 40 g (about 1 oz)
2 Shallots pre peeled weight 50g (about 2 oz)
2 cloves Garlic
1 medium Tomato
1 Tbsp Vegetable oil or coconut oil, for a different flavour
1 tsp White sugar
tsp Salt
2 tbsp Lime juice
2 Eggplants

Dukkah:
5g Sesame Seeds
5g Fennel Seeds
Spices: 5g cumin, 5g coriander, and salt to taste
Groundnuts

Sweet Labneh:
1 tbsp Greek Yoghurt
tbsp Honey
Salt to taste

Steps:
1. Prepare Balado marinade ingredients in a food processor. Set Aside
2. Fry Balado paste in pan till fragrant
3. Deep Fry/ Air Fry Whole Eggplant at 180C for 3 mins or until soft. Set aside to cool
4. Slice of the way through the eggplant and fan it out for presentation.
5. Glaze Balado sauce on the eggplants and char in air fryer for about 1 minute at 180C
6. Prepare sweet Labneh sauce.
7. Air Fry all ingredients for dukkah and season with salt to taste
