Beetroot Kootu/Beetroot Gravy | Gayathiri's Cookbook

Beetroot is a popular root vegetable packed with vitamins, minerals and low in calories and fat.This kootu is made with beetroot,toordal, coconut and some spices.This tastes great with hot steamed rice and papad.

Ingredients:
Toordal- 1/2 cup
Tamarind water- 2 cups
Beetroot-2
Turmeric powder- 1/2 tsp
Salt- As needed
Hing- A pinch
Coriander seeds- 2 tsp
Fenugreek seeds- 1 tsp
Channadal- 1 tsp
Red chillies- 5
Shredded coconut- 1 cup
Oil- 2 tsp
Mustard seeds- 1 tsp
Curry leaves- For seasoning

Directions:
1.Roast coriander seeds, fenugreek seeds, channadal and red chillies in oil until golden brown.
2.Grind the roasted ingredients and 1 cup coconut with water into a fine paste.
3. Pressure cook 1/2 cup toordal for upto 4 whistles. Keep it aside.
4.Take tamarind juice, beetroot turmeric powder, salt and hing in a bowl.
5. Boil until the vegetables are cooked.
6.When the vegetables are cooked, add the ground paste and boil it for 2 minutes.
7.Then add the mashed toordal. let it boil for another 2-3 minutes.
Temper with mustard seeds and curry leaves .

Beetroot gravy is ready!!
