Beetroot is a popular root vegetable packed with vitamins, minerals and low in calories and fat.This kootu is made with beetroot,toordal, coconut and some spices.This tastes great with hot steamed rice and papad.Ingredients:Toordal- 1/2 cupTamarind water- 2 cupsBeetroot-2Turmeric powder- 1/2 tspSalt- As neededHing- A pinchCoriander seeds- 2 tspFenugreek seeds- 1 tspChannadal- 1 tspRed chillies- 5Shredded coconut- 1 cupOil- 2 tspMustard seeds- 1 tspCurry leaves- For seasoningDirections:1.Roast coriander seeds, fenugreek seeds, channadal and red chillies in oil until golden brown.2.Grind the roasted ingredients and 1 cup coconut with water into a fine paste.3. Pressure cook 1/2 cup toordal for upto 4 whistles. Keep it aside.4.Take tamarind juice, beetroot turmeric powder, salt and hing in a bowl.5.
