What kind of fish we got?

We've got some Pacific Red Snapper. Some of the ingredients that I'll use today are some fresh thyme, some garlic which I will smash and mince, cornmeal kind of like a coating that I will put on the fish, and I've got some flour, as well. Some white flour. A little bit of curry powder, kind of give it a little bit of a Caribbean, Indian kind of zing flare to it. A little bit of paprika for color. Fresh, cracked black pepper, and kosher salt which I like whenever I fry or cook things like that. Kind of gives it a little extra crunch.
First step is lightly salt and pepper it. I'll take the smashed garlic, the thyme, the flour, and the other ingredients, and I'll mix them all together-Into like a little bowl?
Into a little bowl and then I'll take the fish and roll it around in it for a little bit.
Well, that sounds good. Okay, so let's see you whip up that garlic over there. Let's see your little happy technique. Remember, there is no technique. There's no technique? No hospital trips. That's the goal.
See, there you go, buddy. Boom. Smash. I like to smash it because I don't have to deal with peeling the skin. That's right. Hop chop.
Boom, it's gone. I've screwed up many a meal. We wound up going to a restaurant. I'm gonna try this!
And you sat there cooking for hours and then, "Oh, it's time to go out, guys." Now, the thyme, we're just gonna take that and we're just gonna strip that thyme, right? Yup. How much of it are you gonna use of all that? A sprig or so for each filet.
Mm-hmm (affirmative). So give it a quick little chop, kinda open up the flavor.
What's your next step?
Well, let's salt and pepper the fish. There is no measuring. I just kind of eyeball it. If you can't see that you're putting too much pepper on, then you must be blind. I like the fact that you actually washed your hands before you dug them back into the spices. Salt and pepper. Those are happy.
So, I'll get a bowl. Combine of the rest of the ingredients. Okay.
So what I like to do is usually two to one for the flour to the cornmeal. Sometimes ... Cornmeal, I really like to use because it gives it a little crunch, a little texture to it. Curry. I'm not gonna try and overdo it on the curry. Usually probably like a tablespoon of that. Half a teaspoon? Yeah, yeah. Tablespoon. Somewhere in there. And then the paprika, about equal parts.
Like it spicy. Spice! A little garlic in here and the thyme. And your thyme? You're gonna put it all in there, huh? Boom. Boom. Like that. Like magic. Mix it up by hand. Sometimes you can use like an egg white or eggs or something like that. I don't like to do that. I like to just keep it really simple. I don't want to have too thick of a batter over the fish.
I guess that's pretty much our next step, then. To get the pan going, get our oil hot and ready to roll, right? Turn the heat up on the stove. Once you put the fish in, it will cool down the oil a little bit. Let's get going. Let's do it.
Cool. So real simple. Take the fish. Uh-huh. Flour. Cornmeal. Cornmeal. Make sure you coat it really well. Yup. Kinda get the excess off so it doesn't clump up. Yeah. And just be careful as you place it in there. Little messy, but-Who cares? Get your kids to clean up. Yeah, right. That looks good.
So I try and keep good spacing on the fish. If they get too close together, they don't quite fry up as nice. Probably flip these in another couple minutes or so. Okay. Handy, dandy spatula. Move that around a little bit. Gonna move them around.
They're kinda moving freely, so I know they're getting close to being ready to be turned. 3-4 minutes? 3-4 minutes a side. On each side, right? That's max. Mm-hmm (affirmative).
There we go. There you go, look at that. Yup. I think she's ready. Calling someone's name, huh? Oh, yeah. That looks good. So these are about done. I'll put them on a cooling rack. Okay.
Let the oil kind of drip off of them and let them cool. So we'll pull of the smaller one. She's probably just about done. She? I mean, we really don't know. Does it matter, at this point? No. And there we go.
Mm-hmm (affirmative). I like the corn meal. I like the crunch on that. Thank you.

Yeah. It's great. Yeah. It's good, huh? Say yes, baby. What do you say? I wouldn't have married him if he couldn't cook.
Exactly, right? He's a growing boy. Oh, yeah! That's what I'm talking about. We're talking party time now. I got me some potatoes!
