Bread slices topped with vegetables, cottage cheese and cheese and baked to perfection.BREAD PIZZAIngredients8 brown bread slices1½ cups tomato puree1 tablespoon tomato ketchupSalt to taste1 teaspoon castor sugar1 teaspoon dried oregano + for sprinkling1 teaspoon red chilli flakes + for sprinkling3-5 basil leaves¾ cup mixed capsicum triangles6-8 baby corn, blanched, halved and cut into 1 inch pieces50 grams cottage cheese, cut into small cubes6 black olives, pitted and slicedGrated mozzarella cheese as requiredMethod1. To prepare pizza sauce, heat tomato puree in a non-stick pan, cover and cook till it thickens. 2. Add tomato ketchup, salt, castor sugar, 1 teaspoon dried oregano, 1 teaspoon chilli flakes and torn basil leaves, mix and cook for 1-2 minutes. Transfer in a bowl.3. Preheat oven to 180° C.4. Spread pizza sauce on each bread slice and place mixed capsicum triangles, baby corn, cottage cheese and olives on top. 5. Spread some mozzarella cheese and sprinkle some dried oregano and chilli flakes on top. Transfer on a baking tray.6. Put the tray in the preheated oven and bake for 5-8 minutes.7.
