Dr. Pooja Chobe - Carrot and Spinach Appam

CARROT AND SPINACH APPAM

Ingredients

1½ medium carrots, grated
1¾ medium bunches spinach, finely chopped
200 grams semolina (suji)
½ teaspoon sugar
1 teaspoon ginger-garlic paste
2 tablespoons yogurt
½ cup coarsely ground sprouted moong
½ cup coarsely ground corn kernels
1-2 green chillies, finely chopped
1 tablespoon finely chopped fresh coriander leaves
1 teaspoon fruit salt
Oil for cooking

Method

1. Combine semolina, sugar, salt, ginger-garlic paste, yogurt, moong, corn, green chillies, chopped coriander, spinach and carrot in a bowl and mix well.
2. Add some water and mix well and set aside for 1 hour.
3. Add fruit salt and mix well.
4. Heat some oil in an appam mould. Spoon the prepared mixture into the moulds and cook till evenly golden from both sides.
5. Serve hot with coconut chutney.
