Celebrating Setsubun Fried Chicken with Roasted Soy Beans
Servings: 2

INGREDIENTS
1 chicken thigh
100g roasted soy beans
Flour, as needed
1 egg (beaten)
A
2 tablespoons noodle soup base (aka mentsuyu 3x concentrated)
1 teaspoon sake
1/2 teaspoon grated ginger
1/2 teaspoon grated garlic
Vegetable oil, as needed

PREPARATION
1. With a rolling pin, crush the beans in a plastic bag.
2. Cut the chicken into bite-sized pieces. Mix all of the ingredients A in a bowl.
Marinate the chicken in the bowl for 20 minutes.
3. Pat dry the chicken (2). Dust the chciken with flour, dip in the beaten egg, and coat
with crushed beans (1).
4. Pour the vegetable oil in a pan (to cover 2cm depth) and heat to 170C/ 338F.
Deep fry the chicken (3) until fully cooked.
5. Enjoy!
