INGREDIENTS

1 tablespoon light brown sugar
1 tablespoon ground cumin
1 teaspoon ground turmeric
1 teaspoon granulated garlic
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon sea salt
3 tablespoons harissa paste
2 tablespoons extra-virgin olive oil
8 chicken thighs (bone-in, skin removed), two slits cut into each thigh
2 white onions, cut into 1-inch chunks
3 medium (about 1½ pounds) red, Maris Piper, or Yukon Gold potatoes, cut into 1-inch chunks
3/4 cup vegetable or chicken stock
Lemon or lime wedges, for serving
