Chicken and Avocado Burger | Sanjeev Kapoor Khazana

Delicious wholesome chicken mince burger with avocado spread. A must try !

CHICKEN AND AVOCADO BURGER

Ingredients

400 grams chicken mince
2 medium avocados, scooped
4 burger buns
1-2 tablespoons chopped coriander leaves
2 medium onions, finely chopped
2-3 green chillies, finely chopped
Salt to taste
4-6 garlic cloves
1 egg yolk
Oil for grilling and greasing
Salt to taste
1 teaspoon lemon juice
1 medium tomato, chopped
1 onion, cut into rings
A pinch of sugar
2 tablespoons butter
4 iceberg lettuce leaves
4 cheese slices

Method

1. Blend together chicken mince, coriander, some of the onion, green chillies, salt and garlic to a smooth paste.
2. Add egg and blend again.
3. Transfer the mixture into a bowl.
4. Heat some oil in a non-stick grill pan.
5. Grease palms with some oil and shape the mixture into patties.
6. Place the patties and grill till the grill marks appear on both the sides and chicken is completely cooked.
7. To prepare guacamole dip, grind together avocado, salt lemon juice till smooth. Transfer into a bowl. Add tomato, remaining onion and green chillies and coriander and mix well.
8. Remove the chicken patties on a plate, add onion rings and sugar to the pan and caramelize till done. Transfer on another plate.
9. Slit burger buns, apply butter on the underside and toast till done.
10. To assemble the burger, apply avocado spread on the bun, place lettuce leaves over it, place patty over each lettuce leaf, add caramelized onion, put some more avocado spread, put cheese slice on top and cover with the remaining half of the bun and serve immediately.
