Chicken and Spring Vegetable Soup | Sanjeev Kapoor Khazana

Clear wholesome soup with loads of vegetables, chicken and macaroni.

CHICKEN AND SPRING VEGETABLE SOUP

Ingredients

2 boneless chicken breasts, cut into cubes
2 stalks of asparagus, sliced
1 small onion, finely chopped
1 medium carrot, sliced
1 cup boiled green peas
1 tablespoon olive oil
1 tablespoon minced garlic
Salt to taste
4 cups chicken stock
¼ cup boiled macaroni pasta
1 tablespoon finely chopped fresh coriander leaves
Black pepper powder to taste
1 tablespoon parmesan cheese powder + for garnishing

Method

1. Heat olive oil in a non-stick pan, add garlic and sauté till lightly browned.
2. Add onion and sauté till translucent.
3. Add chicken and sauté on high heat.
4. Add carrots, asparagus and peas and mix well. Add salt and chicken stock and mix well. Simmer for 2-3 minutes.
5. Add pasta and mix well. Add coriander, pepper powder and mix well.
6. Add parmesan powder and mix well.
7. Serve hot garnished with parmesan cheese powder.
