Chicken Fried Rice | Tiffin Treats by Roopa Nabar | Sanjeev Kapoor Khazana

This Indo chinese style chicken fried rice is a classic - tastes great with just about anything.

CHICKEN FRIED RICE

Ingredients

200 grams boneless chicken, boiled and shredded
3 cups cooked rice
2 tablespoons oil
1 tablespoon chopped garlic
2 spring onions, chopped
2 eggs
Salt to taste
White pepper powder to taste
2 teaspoons light soy sauce
½ tablespoon vinegar
Chicken Manchurian gravy for serving
Kimchi for serving

Method

1. Heat oil in a non-stick wok. Add garlic and sauté till golden brown. Add ¾th of spring onions and sauté for 1 minute.
2. Break in eggs one by one, mix and cook for 1 minute. Add chicken, mix and cook for 1 minute.
3. Reduce heat, add rice and mix. Add white pepper powder, soy sauce, salt and vinegar, mix well and cook on low heat for 2 minutes.
4. Garnish with remaining spring onions and serve hot with chicken Manchurian gravy and kimchi.
